Makes approximately 36 pieces
Ingredients
DOUGH: (Mix to a soft dough)
150 g Cake Flour
150 g Self raising flour
175 g Castor sugar
250 g Butter
1 Egg, beaten (keep a little to smear on top)
TOPPING: (Mix to a soft consistency)
250 g Marzipan
1 Egg
5 ml Almond essence
Flaked Almonds

Method
- Preheat oven to 160°C.
- Divide dough in 2 parts.
- Roll one half and put into swissroll size bake plate.
- Smear marzipan mixture over dough.
- Using a fork and spoon, spread the second half of dough equally over the mixture OR roll second half of dough out and lay over marzipan mixture.
- Brush last little of beaten egg over top.
- Sprinkle flaked almonds on top of mixture.
- Bake for 25 minutes – remove from oven.
- Cool down properly.
- Cut into blocks.
TIP:
You can soften the marzipan for 30 seconds in the microwave – cover the marzipan with glad wrap before placing in microwave
