ALMOND TREATS

Makes approximately 36 pieces

Ingredients

DOUGH: (Mix to a soft dough)
150 g Cake Flour
150 g Self raising flour
175 g Castor sugar
250 g Butter
1 Egg, beaten (keep a little to smear on top)

TOPPING: (Mix to a soft consistency)
250 g Marzipan
1 Egg
5 ml Almond essence
Flaked Almonds

Method

  1. Preheat oven to 160°C.
  2. Divide dough in 2 parts.
  3. Roll one half and put into swissroll size bake plate.
  4. Smear marzipan mixture over dough.
  5. Using a fork and spoon, spread the second half of dough equally over the mixture OR roll second half of dough out and lay over marzipan mixture.
  6. Brush last little of beaten egg over top.
  7. Sprinkle flaked almonds on top of mixture.
  8. Bake for 25 minutes – remove from oven.
  9. Cool down properly.
  10. Cut into blocks.

TIP:

You can soften the marzipan for 30 seconds in the microwave – cover the marzipan with glad wrap before placing in microwave
