CHICKEN PIE / ASPARAGUS PIE

Serves 8

Ingredients

Crust:

500ml Finely Mashed Boiled Potatoes
250ml Cake flour
1 Egg
10ml Baking Powder
125g Butter
Salt
Cayenne Pepper

White Sauce:

60ml Cake Flour
30ml Butter
500ml Clover Full Cream Milk

Filling:

1 Whole Chicken (cooked, deboned, and cut into small pieces) OR 1 big tin of Asparagus
250g Mushrooms
1 pct. Bacon
2 Onions (finely chopped)
1 Egg
Salt & Pepper to taste
Grated cheese

Method

For the crust:

  1. Rub butter into flour and add salt and baking powder – mix.
  2. Add potatoes to the flour mixture – beat the egg and add to mixture – mix until smooth.
  3. Spread batter evenly with the back of a spoon in an oven-proof dish.

For the filling:

  1. Pre-heat oven to 180°C.
  2. Fry the bacon, mushrooms, and onions – make the white sauce with flour, butter, and milk.
  3. Add chopped cooked chicken OR whole asparagus to white sauce.
  4. Add bacon, mushroom and onion mix and salt and pepper to taste.
  5. Place mixture in prepared oven-proof dish – add grated cheese on top.
  6. Bake for 40 minutes in pre-heated oven at 180°C.
  7. Enjoy!

Tip:

You do not need to add Asparagus – this is just to help you make an even bigger pie! NB: Drain the Asparagus before using it!
