Ingredients
420g Cake flour
300g White sugar
200g Brown sugar
65g Nestle cocoa powder
7,5ml Bicarbonate of soda
7,5ml Baking powder
5 ml Salt
3 Large eggs
315ml Buttermilk
10ml Vanilla essence
145ml Sunflower oil
315ml Fresh coffee
Method
- Preheat the oven to 170°C.
- Grease 2 x 9-inch (20cm) round cake tins.
- Sieve the flour, sugar, brown sugar, cocoa powder, bicarbonate of soda, baking powder and salt in a large bowl.
- In a separate large mixing bowl whisk together the eggs, buttermilk, vanilla and oil.
- Little by little add in the dry ingredients, whisking to make sure everything is incorporated.
- Lastly add the coffee and whisk until everything is incorporated – the mixture is runny, so don’t get a fright.
- Divide the batter between the two cake tins and bake for ONE HOUR.

All ingredients to be room temperature, especially eggs and buttermilk
