COCONUT BISCUITS

Ingredients

3x 250ml Cake Flour
300ml Sugar
250ml Coconut
Pinch of Salt

250g Butter
5ml Bicarbonate Soda
5ml Apricot Jam
Cherries

Method

  1. Sift dry ingredients together.
  2. Rub butter with fingers into dry ingredients.
  3. Mix bicarbonate soda and jam and add to dry ingredients.
  4. Add a bit of milk to form a stiff dough.
  5. Make small balls and put onto baking tray.
  6. Press down with a fork.
  7. Put cherry on top of biscuit.
  8. Bake for 10 minutes at 180°C until light brown.
