Ingredients
3x 250ml Cake Flour
300ml Sugar
250ml Coconut
Pinch of Salt
250g Butter
5ml Bicarbonate Soda
5ml Apricot Jam
Cherries

Method
- Sift dry ingredients together.
- Rub butter with fingers into dry ingredients.
- Mix bicarbonate soda and jam and add to dry ingredients.
- Add a bit of milk to form a stiff dough.
- Make small balls and put onto baking tray.
- Press down with a fork.
- Put cherry on top of biscuit.
- Bake for 10 minutes at 180°C until light brown.
