COFFEE BISCUITS

Ingredients

3 x 250ml Cake Flour
125ml Golden Syrup
250ml Sugar
100ml Espresso (extra strong coffee powder)
5ml Vanilla Essence
180g Butter
10ml Bicarbonate of Soda

Filling:
62.5g Butter
250g Icing Sugar
Balance of Espresso Coffee

Method

  1. Preheat oven to 180°C.
  2. Mix 180g butter and sugar until light and creamy.
  3. Add all other ingredients including 75ml of espresso.
  4. Add enough cake flour to prepare a stiff enough dough to use in a biscuit maker.
  5. Cut dough into 6-10cm pieces and put on a greased baking tray.
  6. Stick to same length for all your biscuits.
  7. Bake for 10 minutes until golden brown.
  8. Cool off.
  9. Put 2 biscuits together by using the filling below.
  10. Once ready, enjoy with a cup of coffee.

Filling:

  1. Mix butter and icing sugar, add extra strong coffee gradually and to make a soft icing.
