DATE FINGERS

Makes about 48 biscuits

Ingredients

250 g Butter
250 ml White Sugar
500 g Dates, cut into smaller pieces

1 Egg, beaten
1×200 g Marie biscuits, broken into small pieces
Coconut

Method

  1. Melt butter and sugar over low heat – DO NOT ALLOW TO BROWN
  2. Add dates and egg and mix well
  3. Add biscuit pieces, mix well and remove from heat
  4. Pour into swissrol pan (23x33cm) and use knife to smear it flat and even
  5. Throw a little bit of coconut on top
  6. Leave overnight in fridge
  7. Cut into 3x6cm fingers
