Makes about 48 biscuits
Ingredients
250 g Butter
250 ml White Sugar
500 g Dates, cut into smaller pieces
1 Egg, beaten
1×200 g Marie biscuits, broken into small pieces
Coconut
Method
- Melt butter and sugar over low heat – DO NOT ALLOW TO BROWN
- Add dates and egg and mix well
- Add biscuit pieces, mix well and remove from heat
- Pour into swissrol pan (23x33cm) and use knife to smear it flat and even
- Throw a little bit of coconut on top
- Leave overnight in fridge
- Cut into 3x6cm fingers
