FETA AND ROAST VEGETABLE FRITTATA

Serves 4

Ingredients

30ml Butter
250g Mixed roast vegetables (butternut cubes, baby marrows, red pepper and onion)
200g Feta cheese cubed
4 Jumbo eggs – lightly beaten
60ml Fresh cream

15ml Fresh basil – chopped
125ml (50g) Cheddar cheese – grated
50ml Parmesan cheese – grated
Salt and freshly ground black pepper

Method

  1. Heat the butter in a heavy-based frying pan – add the vegetables and fry for 5 minutes.
  2. Scatter the feta over.
  3. Beat the eggs, cream and basil together – season to taste and pour over the vegetables in the pan.
  4. Reduce the heat and simmer for 7 – 10 minutes or until mixture just start to set.
  5. Sprinkle the cheese over – place under a preheated oven grill and grill for 5 minutes or until cheese has melted and become golden in colour.
  6. Serve immediately with crusty bread and salad.

TIPS:

Roast any extra vegetables for dinner and use in this dish the following day.
