PAP TART

Ingredients

Pap
1 litre (4 cups) water
10 ml (2 tsp) salt
625 ml (2 ½ cups) mealie-meal
30 ml (2 tbsp) Clover Farmstyle Salted Butter

Filling
15 ml (1 tbsp) Clover Farmstyle Salted Butter
200 g (1 packet) bacon, chopped
250 g mushrooms, sliced
1 onion, finely chopped
410 g (1 tin) whole corn kernels, drained
820 g (2 x 410 g tins) chopped tomatoes
salt and freshly ground
black pepper to taste
250 ml (1 cup) Clover cream
250 g Clover Cheddar cheese, grated
handful of shredded basil leaves

Method

Pap

  1. Bring the water and salt to the boil in a large saucepan. Stir in the mealie-meal.
  2. Cover the saucepan, lower the temperature and simmer for 45 minutes. Stir every now and then.
  3. Stir the 30 ml (2 tbsp) of butter into the pap once cooked.
  4. Preheat the oven to 180 °C and butter an oven-proof dish of approximately 30 cm x 20 cm.

Filling

  1. Melt the 15 ml (1 tbsp) butter in a large saucepan and fry the bacon, mushrooms and onion.
  2. Spoon half of the pap into the oven-proof dish and spoon half of the bacon mixture on top. Spread the corn and then one tin of tomatoes over the bacon. Season with salt and pepper.
  3. Spoon the rest of the pap on top, followed by the second tin of tomatoes, the cream and the cheese.
  4. Bake the tart for 30 to 40 minutes until golden brown. Garnish with basil and serve hot.
