PORK RIBS

Serves 4 – 6

Ingredients

3 kg whole pork ribs
250 ml (1 cup) water
10 ml (2 tsp) salt

Marinade
500 ml (2 cups) Clover Krush Orange Juice
125 ml ( ½ cup) honey
125 ml ( ½ cup) soy sauce
125 ml ( ½ cup) apricot jam
5 ml (1 tsp) ground cinnamon
10 ml (2 tsp) ground ginger
60 ml (4 tbsp) apple vinegar
60 ml (4 tbsp) Clover Farmstyle Salted Butter
60 ml (4 tbsp) tomato paste

Method

  1. Preheat the oven to 160 °C.
  2. Place the pork ribs in a large enough oven-proof dish. Mix the water and salt and pour over the ribs.
  3. Cover the ribs with foil and bake for 2 hours or until the meat is tender.
  4. Place all the ingredients for the marinade in a saucepan and simmer for 35 minutes over medium heat.
  5. Remove the ribs and pour off the salt water. Return the ribs to the dish.
  6. Spoon the marinade over the meat and leave for an hour to marinate. Bake for another 20 minutes or grill it on the braai, brushing frequently with the marinade.
  7. Serve hot.
