Serves 8


875ml Cake Flour
7.5ml Salt
5ml Nutmeg
5ml Cinnamon
5ml Fine Cloves
165ml Water

5ml Bicarbonate of Soda
4 Eggs
750ml Sugar
250ml Cooking Oil
250ml Pecan Nuts – finely chopped
500 to 750ml Cooked and mashed Pumpkin


  1. Preheat the oven to 175°C.
  2. Sift dry ingredients together in a bowl.
  3. Mix oil, eggs, pumpkin, and water together and add to dry mixture.
  4. Mix well.
  5. Pour mixture into 2 x bread tins (equal amounts each).
  6. Bake for at least 1 to 1.5 hours.
  7. Once baked, let it cool for a while before removing from bread tins.
  8. Enjoy with butter or as is.


Test with cake tester to make sure it is baked through thoroughly!
