ROOSTERKOEK

Ingredients

500 ml Cake Flour
5 ml Cream of tarter
5 ml Salt
5 ml Baking powder

2,5 ml Bicarbonate of soda
45 ml Butter
250 ml Cream
Buttermilk OR Amazi to bind

Method

  1. Rub butter into dry ingredients.
  2. Mix cream and a little buttermilk to mix – not too much buttermilk as the mix should not be too soft.
  3. Roll out thick ± 2cm and cut into squares.
  4. Braai SLOWLY over coals or use a Estia Braai using water as per video.
  5. Turn the roosterkoek to cook on all sides.

TIP:

I prefer the bread mixture for making roosterkoek but I give you this recipe as an alternative where you can use baking powder.
