SPINACH WITH ONIONS, TOMATOES AND PEANUT BUTTER

Ingredients

Clover Mooi River Salted Choice Butter
2 onions, thinly sliced
820 g (2 x 410 g tins) chopped tomatoes
20 ml (4 tsp) boiling water

300 g (1 bunch) spinach, washed, stems removed, and finely carved
salt and pepper to taste
60 ml (4 tbsp) peanut butter

Method

  1. Melt some butter in a saucepan and fry the onions until soft and translucent.
  2. Add the tomatoes and cook for 3 minutes over medium heat.
  3. Add the spinach and simmer for 5 minutes until the spinach has wilted. Stir every now and then to prevent burning.
  4. Season to taste with salt and pepper.
  5. Mix the peanut butter and boiling water until smooth. Stir the sauce into the mixture in the saucepan.
  6. Simmer for another 5 minutes.
  7. Serve hot with rice or mashed potatoes.
