Ingredients
Clover Mooi River Salted Choice Butter
2 onions, thinly sliced
820 g (2 x 410 g tins) chopped tomatoes
20 ml (4 tsp) boiling water
300 g (1 bunch) spinach, washed, stems removed, and finely carved
salt and pepper to taste
60 ml (4 tbsp) peanut butter
Method
- Melt some butter in a saucepan and fry the onions until soft and translucent.
- Add the tomatoes and cook for 3 minutes over medium heat.
- Add the spinach and simmer for 5 minutes until the spinach has wilted. Stir every now and then to prevent burning.
- Season to taste with salt and pepper.
- Mix the peanut butter and boiling water until smooth. Stir the sauce into the mixture in the saucepan.
- Simmer for another 5 minutes.
- Serve hot with rice or mashed potatoes.
