Ingredients
750 ml (3 cups) sliced green beans
1 onion, finely chopped
2 potatoes, peeled and sliced
1 whole sheep’s tail or
200 g (1 packet) bacon, chopped
250 ml (1 cup) beef stock
10 ml (2 tsp) salt
2,5 ml ( ½ tsp) pepper
15 ml (1 tbsp) Clover Springbok Unsalted Butter
pinch of freshly ground nutmeg
Method
- Heat the vegetables, meat and stock together in a heavy-bottomed saucepan and bring to the boil. Lower the temperature and simmer slowly for approximately 30 minutes or until the potatoes are tender.
- Season with salt and pepper and cook until all the liquid has evaporated.
- Add the butter and nutmeg and mix thoroughly, breaking the potatoes into smaller pieces.
